		<description>O my gawd!  Bacolate?  There is nothing more I love than bacon and chocolate. I would have never thought to put these two together.  How did it come out. Sounds good but then again ummm maybe you might get a case of mud butt! Let me know how it tasted.</description>

		<description>Initially I just did a quick skim of this post, and I thought that your ingredient list for the spring rolls was actually a list of suggested items that might also make good truffles (that is, you&#039;d started with bacon -- why stop there?). I was somewhat relieved to have been mistaken.

I think you didn&#039;t need to temper the chocolate because you actually did temper it - it&#039;s called direct tempering, and it&#039;s the easiest, if sometimes a little unreliable.
